Not trying to be a dick or anything but I have to give my opinion. I personally think your drying them a little too much before your jarring them. Now its hard to say for sure without being able to feel it with my own hands, but if your nugs are crunchy like that you have lost more moisture than you should have. A really good cure comes from a slow dry much like what you have done but also a slower cure. Your nugs should never make that crunchy sound, Just my two cents do with it what you will.
